What is Doña Gilda Picofino?
Doña Gilda Picofino is a different and definitive gilda, designed as a complete, well-rounded, and surprising bite. It starts with the classic recipe—olive, piparra pepper, and anchovy—but introduces a new element that changes the game.
The base consists of a select olive, a sweet (not spicy) piparra pepper, and a high-quality Cantabrian anchovy. Added to this is the exciting new ingredient: a baby red pepper stuffed with a smooth cheese cream blended with Picofino vermouth.
The result is an explosion of perfectly balanced flavor: salty, acidic, sweet, creamy, and aromatic. A concentrated burst of umami in a single bite, where everything makes sense and nothing is superfluous.
Why was Doña Gilda Picofino born?
The gilda is having a moment. There are gildas with dozens of ingredients, endless combinations, and increasingly extreme versions. Innovation seemed almost impossible: everything fits into a gilda.
At Picofino, we decided not to add more things, but to rethink the concept, just as we did with our Mussels in Vermouth Sauce or with Doña Morcilla Picofino. We asked ourselves a different question:
What if, instead of adding solid ingredients, we introduce the vermouth inside the gilda itself?
This is how Doña Gilda Picofino was born. A gilda that integrates vermouth not as an accompaniment, but as an essential part of the bite, through a smooth cheese cream assembled with Picofino vermouth, inserted into a baby pepper that provides structure, texture and a perfect pairing.
It's not an over-the-top Gilda. It's a well-thought-out Gilda.
How to do it
The process is artisanal, patient, and manual.
The finest ingredients are carefully selected, and each pintxo is assembled individually, without haste. Once assembled, they are bathed in sunflower oil with a small percentage of olive oil, seeking balance and smoothness.
There are no vinegars. It's not a "bullfighter" gilda.
The profile is round, elegant and very balanced, where each ingredient is expressed without overpowering itself.
It is a refrigerated product with a shelf life of six months and must always be kept cold. Shipping is also done under refrigeration, maintaining the cold chain at all times.
Format, how to eat it, and packaging
Doña Gilda Picofino's packaging also makes a difference. It comes in jars, avoiding blister packs that limit the contact of the skewer with the oil and impair its preservation.
The jars have a very Picofino design, perfect for enjoying at home or giving as a gift. Each skewer is eaten in a single bite, allowing you to experience the full sequence of flavors and textures: salty, sour, sweet, creamy, crunchy, and aromatic. Pure umami.
