Why was Doña Morcilla Picofino born?

This product stems from a very clear conviction:
Black pudding is one of the great artisan products of our gastronomy, but it was little exploited outside of the classic formats.
At Picofino, we wanted to transform it into something new without betraying its essence. To create a ready-to-eat appetizer, traditional yet sophisticated, with a spectacular combination of flavors and a completely different format, closer to haute cuisine than to the conventional pantry.
Like almost everything at Picofino, Doña Morcilla was born with a simple yet ambitious goal: to evolve a product like no one had done before and to create something that simply hadn't been invented.

How to do it

The base is a high-quality Asturian black pudding, carefully cooked with Picofino vermouth. During the process, the fat is removed to achieve a smoother, more balanced, and more palatable texture, retaining all its flavor but without any heaviness.
Once the black pudding has been prepared, a Picofino vermouth gelée is made, a kind of vermouth jam that concentrates its herbaceous aromas, its bitter note, and its natural elegance. This gelée is placed on top of the black pudding, creating a perfect contrast between intensity and freshness.
The product is canned in a controlled process that guarantees a shelf life of up to 3 years, without losing quality or nuances.

Format, how to eat it, and packaging

Doña Morcilla Picofino comes in a double-opening tin, designed for clean and easy unmolding. Simply place it on a plate and heat it for about 20 seconds in the microwave to reach the perfect temperature.
