These are fresh Galician mussels, extra large, selected individually by size, prepared by hand, and bathed in a light escabeche sauce made with Picofino vermouth. Inside, half a slice of orange adds freshness, aroma, and a citrus note that perfectly complements the dish.
The result is a product unlike anything you've ever tasted: intense yet balanced, traditional yet surprising. Mussels that aren't eaten with a toothpick, but rather They are enjoyed with a spoon., taking advantage of every nuance of the sauce.

Why are they born?

The idea comes from a very simple—and quite common—observation:
Most people eat the mussels... and throw away the marinade.
In many cases, the excessive acidity, accentuated by the vinegar, makes the sauce uninviting for dipping bread or enjoying it as part of the dish. At Picofino, we asked ourselves a logical question:
What if escabeche stopped being a liquid accompaniment and became a sauce that could also be eaten?
The answer was clear: combine the quintessential appetizer—a tin of mussels—with our house's quintessential aperitif: Picofino vermouth. And top it off with a slice of orange to add freshness, aroma, and balance.
The goal was ambitious but very specific: to create the ultimate snack in a can.

How are they made

The process is completely traditional and artisanal, with no shortcuts.
The mussels are hand-selected by size, carefully cleaned, and lightly fried in oil, preserving their texture and flavor. They are then arranged one by one with care, ensuring a neat and uniform presentation.
Then comes the key moment: they are bathed in the escabeche/sauce made with Picofino vermouthwhere the balance between acidity, sweetness, and bitterness is designed to be enjoyed with a spoon. Finally, they are topped with a slice of dehydrated orange, which blends into the sauce and can be eaten in its entirety.
The product then goes through an autoclave, guaranteeing a shelf life of up to 4 years, maintaining its quality, flavor and character intact.

Format, how to eat it, and packaging

They come in a traditional oval tin, containing 8 to 10 units, ready to open and enjoy. No preparation or complicated rituals are needed.
The correct way to eat them is simple—and revealing—:
